Busy week here at Casa B- it seems like between doctors, sporting events, packing, and cooking for a sick friend, the hours are slipping away faster than I can keep up.
Just a quick post tonight- a special request from a dear friend who isn't feeling well prompted me to promise Panna Cotta. I've posted this recipe before here - it's a staple around here.
Today I decided to surprise her with some wonderful sweet plums, roasted with ginger and vanilla and served warm with the custard.
Enjoy!
Ginger Roasted Plums
6-7 ripe, firm plums
scant 1/4 cup sugar
finely grated zest of 1 lemon
1 TBLSP lemon juice
1 TBLSP liqueur (I used Galliano today, but dark rum, or Amaretto is good too)
1 1/2 tsp vanilla
1/4 tsp ground ginger
3-4 TBLSP crystallized ginger, slivered
pinch salt
Preheat oven to 425 degrees. Grease a baking dish with unsalted butter or baking spray. Combine all ingredients in a bowl and stir. Pour into baking dish and roast for 15- 20 minutes, stirring halfway through. Cool to lukewarm and serve with ice cream, custard, or panna cotta

ReplyDeleteI think roasting fruit just brings out the best in it....serving it with that wonderful panna cotta, just floats in clouds of creamy perfection! The ginger is such a nice touch!

ReplyDeleteOH, we have a new restaurant in town that is making a chocolate panna cotta with hazelnuts on top. It is so good. I have never made panna cotta but this makes me want to try. I love ginger on anything. I am sure the combination is just killer. I love all of your recipes, they are all so unique and delicious.
