Panna Cotta and Ginger Roasted Plums~ Heaven on Earth~

Busy week here at Casa B- it seems like between doctors, sporting events, packing, and cooking for a sick friend, the hours are slipping away faster than I can keep up.

Just a quick post tonight- a special request from a dear friend who isn't feeling well prompted me to promise Panna Cotta. I've posted this recipe before here - it's a staple around here.

Today I decided to surprise her with some wonderful sweet plums, roasted with ginger and vanilla and served warm with the custard.


Ginger Roasted Plums
6-7 ripe, firm plums
scant 1/4 cup sugar
finely grated zest of 1 lemon
1 TBLSP lemon juice
1 TBLSP liqueur (I used Galliano today, but dark rum, or Amaretto is good too)
1 1/2 tsp vanilla
1/4 tsp ground ginger
3-4 TBLSP crystallized ginger, slivered
pinch salt
Preheat oven to 425 degrees. Grease a baking dish with unsalted butter or baking spray. Combine all ingredients in a bowl and stir. Pour into baking dish and roast for 15- 20 minutes, stirring halfway through. Cool to lukewarm and serve with ice cream, custard, or panna cotta

  5. I think roasting fruit just brings out the best in it....serving it with that wonderful panna cotta, just floats in clouds of creamy perfection! The ginger is such a nice touch!

  12. OH, we have a new restaurant in town that is making a chocolate panna cotta with hazelnuts on top. It is so good. I have never made panna cotta but this makes me want to try. I love ginger on anything. I am sure the combination is just killer. I love all of your recipes, they are all so unique and delicious.
